This year's event is moving to the amazing Constantino’s Catering at 1385 Lackawanna Trail, Clarks Summit, PA.
The evening runs from 6 to 10 p.m. and the schedule includes a cocktail hour featuring three appetizer stations with wine pairings, a dinner featuring three served courses with wine pairings, the Everhart Uncorked auction, and a dessert grazing station with a final wine pairing, coffee station, and cordials.
This year, we will be savoring exceptional West Coast wines, selected from renowned regions spanning Napa Valley, California to Willamette Valley, Oregon. Uncorked's seven pairings this year will be curated by sommeliers Yvonne Cavalieri, Brandon Giles, and Trip Sandifer of Southern Glazer's Wine & Spirits and chef Larry Nicolais, Jr., of Constantino's.

Yvonne Cavalieri
Yvonne Cavalieri brings a passion for hospitality, fine wine, and relationship-building to her role in beverage distribution as a Wine Representative for Southern Glazer’s Wine & Spirits of Pennsylvania
Cavalieri earned her bachelor’s degree in business management at King's College, Wilkes-Barre, PA, equipping herself with the strategic and organizational foundation that continues to guide her work in the dynamic beverage industry. Holder of a WSET Level 2 Certification in Wines, her commitment to professional development and deepening her expertise in viticulture, wine styles, and global regions drives her growth in the industry.
Before joining Southern Glazer’s, Yvonne spent 15 years in the restaurant industry, working alongside her family at the beloved Anthony’s Restaurant of Old Forge. During this time, she developed a profound understanding of hospitality, customer service, and the importance of pairing great food with exceptional wine, experience she brings with her to making Everhart Uncorked a wonderful event. -
Brandon Giles
With over 13 years of experience in the wine and spirits industry, Brandon Giles brings a refined palate and a deep well of expertise to Uncorked. For this evening, he’s ensured each wine complements the West Coast theme and pairs flawlessly with its accompanying dish.
As a seasoned sommelier and sales leader at Southern Glazer’s Wine & Spirits, Brandon seamlessly blends industry insight with a passion for storytelling, turning every pour into an experience. Armed with a B.A. in Theatre Arts from the Conservatory of Performing Arts at Point Park University, Giles knows how to engage an audience, sharing fascinating stories, tasting notes, and cultural context to bring each bottle to life.
A lover of the arts and a food and wine enthusiast, Giles is the perfect guide for this year’s Uncorked journey. -
Trip Sandifer
Trip Sandifer brings over two decades of experience navigating every angle of the hospitality and spirits industry to Uncorked. His journey began in the kitchen as a cook, but it was behind the bar where he found his true craft. With formal training from both the Savannah College of Art and Design and Chattahoochee Technical College's culinary program, Sandifer developed a distinctive approach that merges artistic vision with technical precision.
Under the mentorship of Advanced Sommelier and Rudd Scholar Justin Amick at The Spence, he sharpened his expertise and earned his Certified Sommelier. He holds a WSET Level 3 in Spirits and Level 2 in Wine. Currently based in Philadelphia, he serves as Field Sales Manager for On-Premise across Pennsylvania, bringing his deep operational knowledge and passion for quality to every account he touches.
For Uncorked, Sandifer’s insight and artistry will be on full display as we travel the West Coast tasting some of the best wines the region has to offer.
